I don't know about you but I am pretty done with winter already. Especially being home so much and seeing all the snow fall, I crave soup. Sometimes it's easiest just to open a can and be done but as packaged groceries go up in price it's nice to make a large batch myself. The whole house smells awesome, we can eat some and freeze some. I freeze in all different size containers to make it easier later (especially a quart or two for me since I work from home). First is a quick to make lasagna soup. Who doesn't love noodles in their soup. The kids are so distracted by the noodles, you be able to sneak in a vegetable without them noticing!
This vegan soup is sure to be a hit. It's both sweet and sour but best of all, only 15 minutes of prep time and cooks in 30 minutes. While the ingredient list may be longer than I like, most are stocked in your kitchen and just need a pinch or squeeze such as salt, pepper, lemon juice and more. Best of all, no math required for a big batch as this makes 10 portions!
This Easy Sweet Potato Soup with Coconut Milk is a creamy, naturally sweet, and comforting dish. Its silky texture and mild, slightly sweet flavor make it perfect for little taste buds! I love this as it uses one pot (yay to limited to dishes), with prep time and cooking, it's ready in under 40 minutes, so I could make it from scratch on a weeknight!
Our last recipe is one you definitely need, as they say, chicken soup is good for the soul. With a 10 minute prep time, it's great for the moms! Consider making a double batch of the base and than you can use the it over it and over with different extras!
